I think aioli is going to be the theme for my sammies this summer! With endless possibilities and variations - I challenge everyone to never eat another boring sandwich!!

Okay, so I'm a little excited about how easy this is. In the summer, a simple (but flavorful) sammie (or sandwich, if you prefer) is just the ticket to an easy weekday dinner or an awesome weekend lunch. Also, great for some kickin' picnics, too. This also makes Leftover Makeovers a snap - add grilled meat, some cheese, and some good bread - presto...a taste-bud tantalyzing treat.

Here's how I roll:

1 lb. grilled steak, sliced thin ($1.29)
4 sub rolls (heartier ones work best, but any will do) ($1.35)
4 slices Provolone cheese (any would work, I like the flavor of provolone with grilled meat) ($.25)
1/3 C. shredded carrot ($.25)
1 1/2 C. shredded lettuce ($.22)

3 T. light mayo (free after coupons)
1 tsp. olive oil ($.10)
pinch of garlic salt ($.05)
1/4 roasted red bell pepper, minced ($.10)
pinch of rosemary (optional) ($.05)

Mix together, until well combined. Chill for 5-10 minutes.

Spread sauce (aioli) on sub rolls, layer in meat, cheese, veggies.
Serve immediately.

Yields = 4 sammies or 8 sammie halves

Want a new twist with a marinade? Try this:

Tangy Tacos with Lime

2/3 C. Mesquite Lime Marinade (free after coupons)
1/2 tsp. cumin ($.10)
1 medium onion, finely chopped ($.15)
1 lb. ground meat (beef or chicken would work, I use ground turkey) ($1.00)
2 cloves garlic, minced ($.15)

In a large skillet, add onions and ground meat, cook together until meat is browned and onion is tender and translucent. Add in cumin and garlic, cook an additional 2-3 minutes to incorporate. Stir in marinade and cook 3-5 minutes until the meat absorbs the liquid.

Serve with shredded lettuce, salsa, cheese, refried beans, and tortillas.
Cilantro is optional.

Yields = 4 servings
Cost: $1.40
Cost per serving: $.35 per serving
This is easily a meal under $5 to feed a family of 4! The best part is - it's absolutely brimming with lots of fresh flavors, and ready in under 30 minutes!

DH and I are collaborators, co-conspirators in the kitchen, our meals becoming more imaginative, more exploratory than I could have imagined just a few short years ago. When we first got married, brats and mashed potatoes were a weekly fixture on our menu, not because I didn't know how to cook, but I was afraid to experiment, didn't think I could afford better, and I hadn't started couponing yet. When I started couponing - everything changed. Suddenly there was money to buy not-completely-necessary ingredients, and I could try my hand at something different. It's opened a whole new, tasty world! Like this past weekend....

Last Friday, I invited DaMama over for dinner, I was making stuffed mushrooms, a swiss and mushroom frittata with English muffins, and for dessert - 30-Minute Tiramisu. While DaMama and I chatted, I chopped mushrooms, whisked eggs, minced red bell pepper, and folded Cool Whip into the light cream cheese pudding mixture that would be our filling for the tiramisu. While the mushrooms - stuffed with gooey, cheesey goodness, baked - we chatted, getting caught up on how things were going for my sister, my mom's latest adventure, and me - mostly whining about work and chatting about the next big coupon deal.

Often when I invite my mother over for dinner, I'm asking her to take a culinary leap of faith and trust me. This was her first frittata, but it certainly won't be her last - and she was delighted...and a surprise bonus: another use for a pie plate. With each dish I create, with each trip I make to the grocery store, I slowly challenge myself to try (and like) another new ingredient. A few years ago, I never would have had cremini mushrooms on hand for a dish like this, my only use for them was sauteed over a large piece of meat. And as for bell peppers, I wouldn't have eaten them, let alone bought them.

For my next creation, I turned to a crockpot cookbook DaMama gave me several months ago. While I'm eager to make the Dijon Chicken, as I don't have Dijon on hand, I was scanning through to see what I could make without hitting the store this week - and have decided on a combination of 2 recipes, Indonesian Chicken (which is delish) and Tropical Pork Tenderloin. I've got loads of chicken in my freezer, but no fresh ginger. I've got the canned pineapple and garlic, but no pork tenderloin at the moment. So it looks like I'll be making a Tropical Chicken with a sweet tangy glaze. When in doubt, go to the crockpot....

For DH, he has a different philosophy. He'll take ingredients he know he likes and combine them in ways typically seen in restaurants. His last creation, inspired predominantly by Diners, Drive-Ins, and Dives: Bacon-Wrapped Hotdogs. Not the healthiest meal, but it had amazing flavor. I did serve a salad with it, but even I know - this is a meal you shouldn't include in the meal plan on any kind of regular basis. Though with the SuperBowl coming up - this is a quick, cheap crowd pleaser - sure to make the guys happy on game day.

This week, our exploration takes us to the tropical side of the chicken - which is only natural, as there is still snow on the ground, and if I can't fly to someplace tropical, than I want to feel like I'm eating there - at least that I can still afford to do! Maybe I'll even ask DH to make me a margarita or pina colada to enjoy while watching a movie - something to do with warmer climates than the one we now live in....nothing like an early escape in the week!

It feels like cabin fever, but it certainly doesn't taste like it:

Monday: Ground turkey tacos, Spanish Rice, beans, all the fixin's for tacos
Tuesday: Tropical Chicken, fried rice, salad
Wednesday: Meatball sammies, salad, chips
Thursday: Dinner at DaMamas
Friday: Spaghetti with Italian sausage, salad, garlic bread
Saturday: Chicken and provolone sausage, potatoes julienne, corn
Sunday: Homemade pizza, salad, garlic bread

Breakfast of the week: cheddar and mushroom frittata, banana bread, cereal, yogurt, bananas

Dessert of the week: White Chocolate Pumpkin Cookies, almond cookies

Looking for an alternative to your basic chicken? With a little time, and very little effort, you can have a Mexican feast on your table.

Prep time: 10 minutes
Cook time: 1 hour
Total time: 1 hour 10 minutes

8-10 chicken drumsticks or chicken thighs (bone in)
1 packet taco or burrito seasoning mix
1 tsp. cumin
1/3 C. flour
1/2 medium onion (any variety), thin sliced

In a wide, shallow bowl, combine flour, seasoning packet, and cumin. Coat chicken with flour mixture and place on a greased baking sheet or pan. Top with onion slices.

Bake for 1 hour at 350, turning chicken over once during baking time.

Serve with cheese, tortillas, black olives, lettuce, salsa, sour cream, and your favorite taco toppings. Serve with refried beans and rice, if desired.

Yields = 4-6 servings

Jewel is the place to be this weekend - and I should know, I spent over 2 hours there yesterday alone, between my mom, my friend Sandy, and I we filled 2 shopping carts with more than 15 transactions worth of goodies. To say we've got a jump on all things for the holiday season and parties would be about right! Here are some items and approximate breakdowns on deals we found:

All prices listed are factored AFTER the $15 in catalina coupons that print at the register and before taxes. Your store(s) may vary, but usually not by too much. All of these prices are factored without manufacturer coupons, which, if you have, will reduce your OOP for each order.

8 Klondike bars (what would you do.....for a Klondike bar) $8.83

So for my holiday parties, I've got loads of stuff to make cheap dip, tons of party mix (thank you Chex!), lots of veggies. For me, I don't have to do much for a Klondike bar!!

But, if you need something to do with all those cheap pasta sides - grab Target printable Q's, head over there wih the $1 off Archer Farms bakery and grab a loaf of garlic bread...for $.50. If you've got a Caputos near by, head there for Bston Leaf lettuce $2/1 (by the lb. I believe). There's a cheap and tasty meal!.

Rub chicken with spices and cover with marinade. Let marinade for 2-4 hours.

Shred head of lettuce, place in large glass bowl and top with sundried tomatoes, julienned pepper, and cheese. Serve dressing on the side.

1 box Betty Crocker Brownie mix ($.79 on sale -1/$2 Q) = $.29
Unsweetened applesauce = $.02, vanilla extract = free, 1 tsp. cinnamon (free) (to make brownies - unsweetened applesauce as substitute for oil)

1 lb. fresh strawberries = $.79 lb.

Serve brownies with strawberries on the side for a decadent treat.
